- 2 cups fresh spinach, chopped

Instructions
- Grate the zucchinis and place them in a clean kitchen towel to squeeze out excess moisture.
- In a large bowl, combine the grated zucchini, chopped spinach, flour, Parmesan cheese, eggs, garlic powder, salt, and pepper.
- Mix until well combined.
- Heat olive oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the skillet and flatten them slightly.
- Cook for 3-4 minutes on each side or until golden brown.
- Remove from the skillet and place on paper towels to drain excess oil.
- Serve warm with your favorite dipping sauce.
