- 2 medium zucchinis, grated
- 2 medium potatoes, grated
- 1 small onion, finely chopped
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- Oil for frying
Instructions
- Grate the zucchinis and potatoes, then place them in a clean kitchen towel and squeeze out excess moisture.
- In a large bowl, combine the grated zucchini, grated potatoes, chopped onion, flour, eggs, salt, pepper, and garlic powder. Mix well.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the mixture into the hot oil, flattening them slightly with the back of the spoon.
- Fry until golden brown on both sides, about 3-4 minutes per side.
- Remove from the pan and drain on paper towels.
- Serve warm with your favorite dipping sauce.
