- 2 large eggs

- Oil for frying
Instructions
- Grate the zucchinis and place them in a clean kitchen towel to squeeze out excess moisture.
- In a large bowl, combine the grated zucchini, chopped onion, flour, eggs, baking powder, salt, pepper, and Parmesan cheese (if using).
- Mix until well combined.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the mixture into the hot oil, flattening them slightly.
- Fry until golden brown on both sides, about 3-4 minutes per side.
- Remove from the pan and drain on paper towels.
- Serve warm with your favorite dipping sauce.
