Ingredients

  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Grate the zucchinis and carrots, then place them in a clean kitchen towel and squeeze out excess moisture.
  2. In a large bowl, combine the grated zucchini and carrots with flour, Parmesan cheese, eggs, garlic powder, onion powder, salt, and pepper.
  3. Mix until well combined.
  4. Heat oil in a frying pan over medium heat.
  5. Drop spoonfuls of the mixture into the hot oil, flattening them slightly with the back of the spoon.
  6. Fry for about 3-4 minutes on each side or until golden brown.
  7. Remove from the pan and place on paper towels to drain excess oil.
