Description

Ingredients

  • 1 cup orzo pasta
  • 1 cup ricotta cheese
  • 1 cup mixed vegetables (bell peppers, zucchini, spinach)
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the orzo according to package instructions until al dente. Drain and set aside.
  3. In a large mixing bowl, gently fold together the cooked orzo, ricotta cheese, mixed vegetables, marinara sauce, garlic powder, Italian seasoning, salt, and pepper until well mixed.
  4. Transfer the mixture into a greased baking dish, spreading it evenly for uniform cooking.
  5. Generously top with shredded mozzarella cheese.
  6. Drizzle the olive oil over the top.
  7. Bake for 25-30 minutes or until the cheese is bubbly and golden.
  8. Allow the dish to cool slightly before serving.

Notes

To make ahead, assemble the dish a day before and bake when ready. Adjust cooking time for air fryer if used.
