Ingredients

  • 1 lb ground meat (beef, chicken, or turkey)
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped cilantro
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. In a bowl, combine ground meat, breadcrumbs, cilantro, egg, garlic, ginger, salt, and pepper. Mix well and form into meatballs.
  2. In a large skillet, heat a little oil over medium heat and cook the meatballs until browned on all sides. Remove and set aside.
  3. In the same skillet, add coconut milk, red curry paste, fish sauce, and lime juice. Stir to combine.
  4. Add the meatballs back to the skillet and simmer in the sauce for about 15-20 minutes until cooked through.
  5. Serve the meatballs over cooked rice and garnish with additional cilantro if desired.
