- 1 lb ground meat (beef, chicken, or turkey)
- 1/2 cup breadcrumbs
- 1/4 cup chopped cilantro
- 1 egg
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 can (14 oz) coconut milk
- 2 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tbsp lime juice
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a bowl, combine ground meat, breadcrumbs, cilantro, egg, garlic, ginger, salt, and pepper. Mix well and form into meatballs.
- In a large skillet, heat a little oil over medium heat and cook the meatballs until browned on all sides. Remove and set aside.
- In the same skillet, add coconut milk, red curry paste, fish sauce, and lime juice. Stir to combine.
- Add the meatballs back to the skillet and simmer in the sauce for about 15-20 minutes until cooked through.
- Serve the meatballs over cooked rice and garnish with additional cilantro if desired.

- Adjust the level of curry paste according to your spice preference.
- For a vegetarian option, substitute meat with plant-based meat alternatives.
