Description

A vibrant and customizable taco salad featuring seasoned ground beef, fresh vegetables, and crunchy tortilla chips.


Ingredients

  • 1 lb ground beef (or turkey)
  • 1 packet taco seasoning
  • 1 head Romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, diced
  • 1 cup salsa
  • Tortilla chips (for serving)
  • Sour cream (optional)

Instructions

  1. Heat a skillet over medium heat. Brown the ground beef, breaking it apart with a spatula until it’s no longer pink. Drain any excess fat.
  2. Stir in the taco seasoning as per the package instructions. Let the mixture simmer for a few minutes.
  3. In a large bowl, combine the chopped Romaine lettuce, halved cherry tomatoes, drained black beans, corn, shredded cheese, and diced avocado.
  4. Scoop the seasoned taco meat into the vegetable bowl and gently fold everything together.
  5. Plate the taco salad and serve with salsa on the side. Top with tortilla chips and sour cream if desired.

Notes

Prepare ingredients ahead of time for quicker assembly. Use an air fryer for the meat for a healthier option.
