Description

Delicious baked potatoes topped with spiced ground beef and a variety of fresh toppings, merging the comfort of potatoes with the vibrant flavors of tacos.


Ingredients

  • 4 large potatoes (Russets)
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (Cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and poke holes in them with a fork.
  3. Bake the potatoes in the preheated oven for 45–60 minutes, until tender.
  4. Cook the ground meat in a skillet over medium heat until browned, draining excess fat.
  5. Add the taco seasoning and diced tomatoes to the skillet, and cook for a few minutes until heated through.
  6. Let the potatoes cool slightly before slicing them open.
  7. Fluff the insides with a fork and spoon taco meat mixture generously on top.
  8. Sprinkle with cheese, and return to the oven for 5–10 minutes until the cheese is melted.
  9. Top with sour cream and green onions before serving.

Notes

You can substitute sweet potatoes for a different flavor or use Greek yogurt instead of sour cream.
