- 4 large potatoes (Russets)
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup diced tomatoes
- 1 cup shredded cheese (Cheddar or Mexican blend)
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the potatoes thoroughly and poke holes in them with a fork.
- Bake the potatoes in the preheated oven for 45–60 minutes, until tender.
- Cook the ground meat in a skillet over medium heat until browned, draining excess fat.
- Add the taco seasoning and diced tomatoes to the skillet, and cook for a few minutes until heated through.
- Let the potatoes cool slightly before slicing them open.
- Fluff the insides with a fork and spoon taco meat mixture generously on top.
- Sprinkle with cheese, and return to the oven for 5–10 minutes until the cheese is melted.
- Top with sour cream and green onions before serving.
Notes
You can substitute sweet potatoes for a different flavor or use Greek yogurt instead of sour cream.
