Ingredients

- 4 slices of bread
- 1 cup smoky gouda cheese, shredded
- 1 cup mushrooms, sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sliced mushrooms and season with salt and pepper.
- Cook until mushrooms are caramelized, about 5-7 minutes.
- Remove mushrooms from skillet and set aside.
- Butter one side of each slice of bread.
- On the unbuttered side, layer smoky gouda cheese and caramelized mushrooms.
- Top with another slice of bread, buttered side up.
- Heat the skillet over medium heat and grill the sandwich until golden brown, about 3-4 minutes per side.
- Remove from skillet, slice, and serve warm.
