- 4 boneless, skinless chicken breasts
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 8 ounces fettuccine pasta
Instructions
- Place the chicken breasts in the slow cooker.
- Add the sun-dried tomatoes, spinach, garlic, Italian seasoning, salt, and pepper.
- Pour the heavy cream over the chicken and vegetables.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- About 30 minutes before serving, cook the fettuccine according to package instructions.
- Once the chicken is cooked, shred it in the slow cooker and stir in the Parmesan cheese.
- Serve the chicken Alfredo over the cooked fettuccine.
Notes
- For a lighter version, you can use half-and-half instead of heavy cream.
- Feel free to add other vegetables like bell peppers or mushrooms.
- This dish can be made ahead of time and reheated for easy meals.
