A delicious and easy recipe for Slow Cooker Spinach & Artichoke Chicken Pasta that combines tender chicken, creamy artichoke, and fresh spinach for a comforting meal.

- 1 lb chicken breast
- 1 can (14 oz) artichoke hearts, drained and chopped
- 2 cups fresh spinach
- 1 cup cream cheese
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 8 oz pasta of choice
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Place the chicken breast in the slow cooker.
- Add the chopped artichoke hearts, fresh spinach, cream cheese, chicken broth, garlic powder, onion powder, salt, and pepper.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- About 30 minutes before serving, cook the pasta according to package instructions.
- Once the chicken is cooked, shred it in the slow cooker and stir in the grated Parmesan cheese.
- Mix in the cooked pasta and serve warm.
Notes
- For a lighter version, use low-fat cream cheese.
- Feel free to add other vegetables like bell peppers or mushrooms.
- This dish can be made ahead and stored in the refrigerator for up to 3 days.
