A delicious and easy recipe for Slow Cooker Spinach & Artichoke Chicken Pasta that combines tender chicken, creamy artichoke, and fresh spinach for a comforting meal.


Ingredients

  • 1 lb chicken breast
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 2 cups fresh spinach
  • 1 cup cream cheese
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 8 oz pasta of choice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Place the chicken breast in the slow cooker.
  2. Add the chopped artichoke hearts, fresh spinach, cream cheese, chicken broth, garlic powder, onion powder, salt, and pepper.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. About 30 minutes before serving, cook the pasta according to package instructions.
  5. Once the chicken is cooked, shred it in the slow cooker and stir in the grated Parmesan cheese.
  6. Mix in the cooked pasta and serve warm.

  • For a lighter version, use low-fat cream cheese.
