Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Brown the beef cubes on all sides.
  2. Transfer the browned beef to the slow cooker.
  3. Add the carrots, potatoes, onion, garlic, tomato paste, thyme, rosemary, salt, and pepper to the slow cooker.
  4. Pour the beef broth over the ingredients in the slow cooker.
  5. Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.
  6. Adjust seasoning if necessary before serving.

Notes

  • For a thicker stew, mix 2 tablespoons of cornstarch with cold water and stir it into the stew during the last 30 minutes of cooking.
