- 1 tablespoon orange juice
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract (for filling)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, baking soda, and salt.
- In a separate bowl, cream together the butter and sugar until light and fluffy.
- Add the egg, orange zest, vanilla extract, and orange juice to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool completely on a wire rack.
- In a bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth to make the filling.
- Spread the filling on the flat side of one cookie and sandwich with another cookie.
