- 4 boneless, skinless chicken breasts
- 1 lb Brussels sprouts, halved
- 1/2 cup balsamic vinegar
- 1/4 cup olive oil
- 2 tablespoons honey
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, whisk together balsamic vinegar, olive oil, honey, minced garlic, salt, and pepper.
- Place chicken breasts on a sheet pan and pour half of the balsamic mixture over them.
- Add the halved Brussels sprouts to the sheet pan and drizzle with the remaining balsamic mixture.
- Toss the Brussels sprouts to coat them evenly.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the Brussels sprouts are tender.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, marinate the chicken in the balsamic mixture for a few hours before cooking.
- Feel free to add other vegetables like carrots or potatoes to the sheet pan.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
