A delicious and easy one-pan meal featuring balsamic chicken and roasted Brussels sprouts, perfect for a weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 lb Brussels sprouts, halved
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, olive oil, honey, minced garlic, salt, and pepper.
  3. Place chicken breasts on a sheet pan and pour half of the balsamic mixture over them.
  4. Add the halved Brussels sprouts to the sheet pan and drizzle with the remaining balsamic mixture.
  5. Toss the Brussels sprouts to coat them evenly.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the Brussels sprouts are tender.
  7. Garnish with fresh parsley before serving.
