Description

A deliciously rich and creamy salted caramel pumpkin cheesecake that combines the flavors of fall with a decadent twist.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup salted caramel sauce

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth. Add pumpkin puree, sugar, eggs, vanilla, cinnamon, nutmeg, and salt. Mix until well combined.
  4. Pour the cheesecake mixture over the crust in the springform pan.
  5. Bake for 50-60 minutes or until the center is set but slightly jiggly.
  6. Remove from the oven and let cool. Drizzle salted caramel sauce over the top.
  7. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For a stronger pumpkin flavor, add more pumpkin puree.
  • Make sure the cream cheese is at room temperature for a smoother texture.
  • Top with whipped cream and additional caramel sauce if desired.
