- 2 cups fresh rhubarb, chopped
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 cup all-purpose flour
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×9 inch baking dish.
- Combine the melted butter with granulated sugar and eggs in a mixing bowl. Whisk until thoroughly mixed.
- Add vanilla extract, flour, baking powder, and salt to the mixture. Stir gently until just combined.
- Fold in the chopped rhubarb carefully.
- Pour the mixture into the prepared baking dish, spreading it evenly.
- Bake for 25-30 minutes until golden and a toothpick inserted comes out clean.
- Cool in the dish for at least 10 minutes before cutting into squares.
