Description

Ingredients

  • 2 cups fresh rhubarb, chopped
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×9 inch baking dish.
  2. Combine the melted butter with granulated sugar and eggs in a mixing bowl. Whisk until thoroughly mixed.
  3. Add vanilla extract, flour, baking powder, and salt to the mixture. Stir gently until just combined.
  4. Fold in the chopped rhubarb carefully.
  5. Pour the mixture into the prepared baking dish, spreading it evenly.
  6. Bake for 25-30 minutes until golden and a toothpick inserted comes out clean.
  7. Cool in the dish for at least 10 minutes before cutting into squares.
