  • 1/2 cup protein powder
  • 1/4 cup coconut flour
  • 1/4 cup sweetener of choice
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup unsweetened almond milk
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 cup fruit preserves or nut butter for filling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the almond flour, protein powder, coconut flour, sweetener, baking powder, and salt.
  3. Add the almond milk, melted coconut oil, and vanilla extract to the dry ingredients and mix until a dough forms.
  4. Roll out the dough on a parchment-lined surface to about 1/4 inch thick.
  5. Cut the dough into rectangles to form the pop tart shapes.
  6. Place a spoonful of fruit preserves or nut butter in the center of half of the rectangles.
  7. Top with the remaining rectangles and seal the edges with a fork.
  8. Bake in the preheated oven for 15-20 minutes or until golden brown.
  9. Let cool before serving.
