- 1 cup almond flour
- 1/2 cup protein powder
- 1/4 cup coconut flour
- 1/4 cup sweetener of choice
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup unsweetened almond milk
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1/2 cup fruit preserves or nut butter for filling
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the almond flour, protein powder, coconut flour, sweetener, baking powder, and salt.
- Add the almond milk, melted coconut oil, and vanilla extract to the dry ingredients and mix until a dough forms.
- Roll out the dough on a parchment-lined surface to about 1/4 inch thick.
- Cut the dough into rectangles to form the pop tart shapes.
- Place a spoonful of fruit preserves or nut butter in the center of half of the rectangles.
- Top with the remaining rectangles and seal the edges with a fork.
- Bake in the preheated oven for 15-20 minutes or until golden brown.
- Let cool before serving.

- Store leftovers in an airtight container for up to a week.
- These pop tarts can be frozen for longer storage.
