For the Punch Base:

  • 4 cups (32 oz / 1 liter) unsweetened pineapple juice (chilled)

  • 2 cups (16 oz) fresh orange juice (chilled, about 46 oranges)

  • 1 cup (8 oz) fresh lime juice (chilled, about 810 limes)

  • 1 cup (8 oz) high-quality grenadine syrup OR 1 cup simple syrup (see note)

  • 23 dashes of Angostura aromatic bitters (or orange bitters)

For the Spirit Blend:

  • 2 cups (16 oz) light or gold rum (e.g., Bacardi Gold, Appleton Estate Signature)

  • 1 cup (8 oz) dark rum (e.g., Myers’s, Gosling’s Black Seal, or Kraken for spice)

  • ½ cup (4 oz) orange liqueur, such as Cointreau or Triple Sec (optional, for extra citrus depth)

For Serving & Garnish:

  • 23 cups (1624 oz) chilled club soda, ginger ale, or sparkling wine (added just before serving)

  • Ice: One large block or several cups of ice cubes (to slow dilution)

  • Garnish: Orange wheels, lime wheels, pineapple spears or chunks, maraschino cherries, fresh mint sprigs, freshly grated nutmeg.

Note on Sweetness: Grenadine adds a fruity pomegranate flavor and a beautiful red hue. For a more traditional, clear(er) punch, use simple syrup. Adjust sweetness to taste.


Instructions

Step 1: Juice and Chill
Juice your oranges and limes. For the best flavor, use fresh-squeezed citrus—bottled juice will not provide the same bright, vibrant acidity. Ensure all juices and sodas are well-chilled before assembling. This allows you to use less ice and prevents rapid dilution.

Step 2: Combine the Punch Base
In a very large punch bowl or drink dispenser (at least 4-5 quart capacity), combine the chilled pineapple juice, orange juice, lime juice, grenadine (or simple syrup), and a few dashes of bitters. Stir thoroughly with a long ladle to combine.

Step 3: Add the Spirits
Pour in the light rum, dark rum, and orange liqueur (if using) into the punch bowl. Stir again gently but thoroughly to integrate the spirits with the juices. At this point, you have the complete punch base. You can cover and refrigerate this base for up to 4-6 hours before serving to allow the flavors to meld beautifully.

Step 4: Prepare for Service
Just before your guests arrive, add your ice to the bowl. For slower dilution and a impressive look, use one large, clear ice block (made by freezing water in a loaf pan or bowl) or several large ice cubes. Arrange a portion of your fruit garnishes (orange wheels, lime wheels, pineapple chunks) directly in the punch so they float and infuse.

Step 5: Add the Sparkle
Right before serving, gently pour in the chilled club soda, ginger ale, or sparkling wine. Stir very gently once to incorporate the bubbles without losing all the carbonation.

Step 6: Final Garnish and Serve
Add the final visual touches: a few fresh mint sprigs, maraschino cherries, and a light dusting of freshly grated nutmeg over the top for aroma. Provide a ladle and cups for serving. Encourage guests to scoop some of the boozy fruit garnish into their cups.
