Instructions
- Grease the baking dish: Generously coat your 9×13-inch baking dish with butter to avoid sticking.
- Cube the bread: Cut the bread into 1-inch cubes and layer half of them in the bottom of the greased dish.
- Layer the bananas: Spread banana slices evenly over the bread layer, allowing their sweetness to soak in.
- Add the remaining bread: Top with the remaining bread cubes, making sure it’s packed nicely.
- Prepare the custard mixture: In a mixing bowl, whisk together the eggs, milk, brown sugar, vanilla extract, cinnamon, and salt until well combined and smooth.
- Soak the bread: Pour the custard evenly over the layered bread, ensuring each piece is generously soaked. Gently press down any exposed bread.
- Cover and refrigerate: Cover the dish tightly with aluminum foil and let it chill overnight in the refrigerator.
- Preheat and bake: The next morning, preheat your oven to 350°F (175°C). Bake the casserole covered for 30 minutes.
- Finish baking: Remove the foil and bake for an additional 15 minutes until the top is golden brown and slightly crisp.
- Serve and enjoy: Serve warm, drizzled with maple syrup and perhaps a dusting of powdered sugar.

Use day-old or slightly stale bread for the best texture; ripe bananas enhance sweetness and flavor.
