Description

Ingredients

  • 2 cups of chicken breast, diced
  • 1 cup of long-grain rice
  • 1 can of diced tomatoes with green chilies
  • 1 cup of chicken broth
  • 1 cup of shredded cheese (cheddar or queso blanco)
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of chili powder
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions

  1. Heat oil: In a large pot over medium heat, add the olive oil. Let it shimmer, indicating that it’s ready for the subsequent ingredients.
  2. Cook onions and garlic: Toss in the diced onion and minced garlic. Sauté until the mixture softens and fragrant, about 3 minutes.
  3. Add chicken: Incorporate the diced chicken. Cook until no longer pink, roughly 5-7 minutes.
  4. Add rice and broth: Bring in the rice, diced tomatoes, chicken broth, chili powder, cumin, and salt and pepper. Stir to combine.
  5. Simmer: Let the mixture come to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes.
  6. Melt cheese: Stir in the shredded cheese until it melts into creamy goodness.
  7. Serve warm: Dish it out while it’s warm, garnishing with fresh herbs if desired.
