- 2 cups of chicken breast, diced
- 1 cup of long-grain rice
- 1 can of diced tomatoes with green chilies
- 1 cup of chicken broth
- 1 cup of shredded cheese (cheddar or queso blanco)
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of chili powder
- 1 teaspoon of cumin
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- Heat oil: In a large pot over medium heat, add the olive oil. Let it shimmer, indicating that it’s ready for the subsequent ingredients.
- Cook onions and garlic: Toss in the diced onion and minced garlic. Sauté until the mixture softens and fragrant, about 3 minutes.
- Add chicken: Incorporate the diced chicken. Cook until no longer pink, roughly 5-7 minutes.
- Add rice and broth: Bring in the rice, diced tomatoes, chicken broth, chili powder, cumin, and salt and pepper. Stir to combine.
- Simmer: Let the mixture come to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes.
- Melt cheese: Stir in the shredded cheese until it melts into creamy goodness.
- Serve warm: Dish it out while it’s warm, garnishing with fresh herbs if desired.
