Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the butter, brown sugar, and granulated sugar in a large bowl using a hand mixer until fluffy, about 2-3 minutes.
- Beat in the eggs one at a time, then add the vanilla extract.
- Whisk together flour, baking soda, cinnamon, and salt in a separate bowl.
- Mix the dry ingredients into the wet mixture until combined.
- Stir in the rolled oats and add raisins or chocolate chips if desired.
- Scoop rounded tablespoons of dough onto ungreased baking sheets, spaced 2 inches apart.
- Bake for 10-12 minutes or until golden brown around the edges.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Chill the dough for up to 24 hours before baking for enhanced flavors. These cookies can be made gluten-free by substituting with gluten-free flour.
