Description

  • 2 large eggs

  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 1 cup raisins or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter, brown sugar, and granulated sugar in a large bowl using a hand mixer until fluffy, about 2-3 minutes.
  3. Beat in the eggs one at a time, then add the vanilla extract.
  4. Whisk together flour, baking soda, cinnamon, and salt in a separate bowl.
  5. Mix the dry ingredients into the wet mixture until combined.
  6. Stir in the rolled oats and add raisins or chocolate chips if desired.
  7. Scoop rounded tablespoons of dough onto ungreased baking sheets, spaced 2 inches apart.
  8. Bake for 10-12 minutes or until golden brown around the edges.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Chill the dough for up to 24 hours before baking for enhanced flavors. These cookies can be made gluten-free by substituting with gluten-free flour.
