- 4 boneless, skinless chicken breasts
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 cup long-grain white rice
- 1 1/2 cups chicken broth
- 1 onion, chopped
- 1 cup frozen mixed vegetables
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the cream of mushroom soup, cream of chicken soup, chicken broth, and rice.
- Spread the mixture evenly in a greased 9×13 inch baking dish.
- Place the chicken breasts on top of the rice mixture and season with salt and pepper.
- Add the chopped onion and frozen mixed vegetables on top of the chicken.
- Cover the dish tightly with aluminum foil.
- Bake in the preheated oven for 1 hour and 15 minutes.
- Remove from the oven, let it sit for 10 minutes before serving.
