- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp Italian seasoning
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup fresh basil, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, pepper, and Italian seasoning. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
- Bake the meatballs in the preheated oven for 20 minutes or until cooked through.
- In a large skillet, combine heavy cream, chicken broth, and sun-dried tomatoes. Bring to a simmer over medium heat.
- Add the baked meatballs to the skillet and simmer for an additional 5-10 minutes.
- Stir in fresh basil before serving.
Notes
- For a lighter version, you can use ground turkey instead of chicken.
