- 1 carrot, grated

- 1 teaspoon Dijon mustard
- 2 cloves garlic, minced

Instructions
- Toss the cauliflower florets, diced bell pepper, grated carrot, diced cucumber, and sliced red onion in a large bowl.
- Whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, minced garlic, and a pinch of salt and pepper in a separate bowl.
- Pour the vinaigrette over the vegetables and gently toss to coat evenly.
- Cover the bowl and refrigerate for at least 1 hour or overnight.
