Ingredients

  • 1 bell pepper, diced
  • 1 carrot, grated
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Toss the cauliflower florets, diced bell pepper, grated carrot, diced cucumber, and sliced red onion in a large bowl.
  2. Whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, minced garlic, and a pinch of salt and pepper in a separate bowl.
  3. Pour the vinaigrette over the vegetables and gently toss to coat evenly.
