- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- ½ cup buttermilk
- 1 cup fresh blueberries
- 1 cup powdered sugar
- 2 tablespoons lemon juice (for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- Whisk together the flour, baking powder, baking soda, and salt in a bowl.
- Cream the butter and sugar until light and fluffy, about 3-4 minutes.
- Beat in the eggs one at a time, then add the lemon zest and lemon juice.
- Alternate adding the dry ingredients and buttermilk into the butter mixture, beginning and ending with flour.
- Fold in the blueberries gently with a spatula.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- Mix the powdered sugar and lemon juice for the glaze.
- Drizzle the glaze over the cooled bread.
- Slice and enjoy!
