Ingredients

  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • ½ cup buttermilk
  • 1 cup fresh blueberries
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Whisk together the flour, baking powder, baking soda, and salt in a bowl.
  3. Cream the butter and sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, then add the lemon zest and lemon juice.
  5. Alternate adding the dry ingredients and buttermilk into the butter mixture, beginning and ending with flour.
  6. Fold in the blueberries gently with a spatula.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Mix the powdered sugar and lemon juice for the glaze.
  10. Drizzle the glaze over the cooled bread.
  11. Slice and enjoy!
