Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan well.
- Mix the dry ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- Combine the wet ingredients: In another bowl, whisk the melted butter and sugar until blended; add buttermilk, eggs, lemon zest, and vanilla.
- Incorporate the dry mixture: Gradually add the dry ingredients to the wet mixture, stirring gently.
- Fold in the blueberries gently using a rubber spatula.
- Transfer the batter into the prepared loaf pan and smooth the top.
- Bake for 55-60 minutes, checking for doneness with a toothpick.
- Make the glaze: Mix the powdered sugar with lemon juice until smooth; drizzle over the cool bread.
Notes
For a lighter version, substitute butter with Greek yogurt. Store in an airtight container for up to 3-4 days at room temperature or freeze for up to 3 months.
