Ingredients

  • 1/2 cup evaporated milk
  • 1/4 cup vegetable oil
  • 1 teaspoon lemon extract
  • 2 large eggs
  • 1 cup blueberries (fresh, frozen, or canned)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your loaf pan.
  2. Whisk the flour, baking powder, baking soda, and salt together in a medium bowl.
  3. Combine the sugar, evaporated milk, vegetable oil, lemon extract, and eggs in a large bowl and beat until smooth.
  4. Mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in the blueberries gently.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, or until a toothpick comes out clean.
  8. Cool the loaf in the pan for 10 minutes before transferring to a wire rack.
