- 2 large eggs
- 1 cup blueberries (fresh, frozen, or canned)
Instructions
- Preheat the oven to 350°F (175°C) and grease your loaf pan.
- Whisk the flour, baking powder, baking soda, and salt together in a medium bowl.
- Combine the sugar, evaporated milk, vegetable oil, lemon extract, and eggs in a large bowl and beat until smooth.
- Mix the dry ingredients into the wet ingredients until just combined.
- Fold in the blueberries gently.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- Cool the loaf in the pan for 10 minutes before transferring to a wire rack.
