Lazy Enchiladas are a quick and easy version of the traditional Mexican dish, perfect for busy weeknights.


Ingredients

  • 1 can of enchilada sauce
  • 2 cups of cooked chicken, shredded
  • 1 cup of shredded cheese
  • 8 corn tortillas
  • 1/2 cup of diced onions
  • 1/2 cup of black beans, drained and rinsed
  • 1 tablespoon of olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions until translucent.
  3. Add shredded chicken and black beans to the skillet, mixing well.
  4. In a baking dish, spread a layer of enchilada sauce on the bottom.
  5. Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in the baking dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  8. Let cool for a few minutes before serving.
