Lazy Enchiladas are a quick and easy version of the traditional Mexican dish, perfect for busy weeknights.
Ingredients

- 1 can of enchilada sauce
- 2 cups of cooked chicken, shredded
- 1 cup of shredded cheese
- 8 corn tortillas
- 1/2 cup of diced onions
- 1/2 cup of black beans, drained and rinsed
- 1 tablespoon of olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté onions until translucent.
- Add shredded chicken and black beans to the skillet, mixing well.
- In a baking dish, spread a layer of enchilada sauce on the bottom.
- Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
- Let cool for a few minutes before serving.
Notes
- Feel free to add your favorite toppings like sour cream or guacamole.
- This recipe can be made vegetarian by omitting the chicken and adding more beans or vegetables.
- Leftovers can be stored in the refrigerator for up to 3 days.
