- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup unsalted butter, melted
- 1 (14 oz) can sweetened condensed milk
- 1/2 cup key lime juice
- 1/2 teaspoon lime zest
- 2 large eggs
- Whipped cream for topping (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Make the crust: In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter until well mixed. Press this mixture into the bottom of a greased 9-inch baking dish.
- Prepare the filling: In another bowl, whisk together sweetened condensed milk, key lime juice, lime zest, and eggs until smooth.
- Combine the filling with the crust, spreading it evenly.
- Bake for 15-20 minutes, or until the filling is set but slightly jiggly in the center.
- Chill completely and refrigerate for at least 2 hours.
- Slice into bars and serve with whipped cream if desired.
Notes
These bars can be made a day in advance. Can substitute regular limes if key limes are not available.
