Description

Ingredients

  • 6 large eggs
  • 4 slices of bacon
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • Salt and pepper to taste
  • Chopped chives for garnish

Instructions

  1. Hard boil the eggs by placing them in a pot of water, bringing it to a boil, then covering and letting them sit for 12 minutes.
  2. While the eggs are cooking, fry the bacon in a skillet until crispy. Drain on paper towels and crumble.
  3. Once the eggs are done, cool them in ice water, then peel and slice them in half.
  4. Remove the yolks and place them in a bowl. Add mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Mix until smooth.
  5. Fold in the crumbled bacon into the yolk mixture.
  6. Fill the egg whites with the yolk and bacon mixture.
  7. Garnish with chopped chives and additional bacon if desired.

Notes

  • For a spicier kick, add a dash of hot sauce to the yolk mixture.
  • These can be made a few hours in advance; just keep them refrigerated until serving.
