- 6 large eggs
- 4 slices of bacon
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon apple cider vinegar
- Salt and pepper to taste
- Chopped chives for garnish
Instructions
- Hard boil the eggs by placing them in a pot of water, bringing it to a boil, then covering and letting them sit for 12 minutes.
- While the eggs are cooking, fry the bacon in a skillet until crispy. Drain on paper towels and crumble.
- Once the eggs are done, cool them in ice water, then peel and slice them in half.
- Remove the yolks and place them in a bowl. Add mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Mix until smooth.
- Fold in the crumbled bacon into the yolk mixture.
- Fill the egg whites with the yolk and bacon mixture.
- Garnish with chopped chives and additional bacon if desired.
Notes
- For a spicier kick, add a dash of hot sauce to the yolk mixture.
- These can be made a few hours in advance; just keep them refrigerated until serving.
- Feel free to experiment with different types of bacon or add other toppings like paprika or jalapeños.
