Ingredients

  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 cup bell peppers, chopped
  • 1 cup pineapple chunks
  • 1/2 cup onion, chopped
  • 1/2 cup ketchup
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  1. Prepare the ingredients by chopping the chicken, bell peppers, onion, and pineapple into bite-sized pieces.
  2. Assemble the chicken, bell peppers, onion, and pineapple in the Instant Pot, spreading them evenly.
  3. Mix the sauce by whisking together the ketchup, soy sauce, brown sugar, and rice vinegar in a medium bowl.
  4. Pour the sauce over the chicken and vegetables in the pot.
  5. Seal the lid and set the Instant Pot to cook on high pressure for 10 minutes.
  6. Natural release for 5 minutes after cooking, then quick release the remaining pressure.
  7. Thicken the sauce by mixing cornstarch and water until smooth, then stir it into the pot.
  8. Season to taste with salt and pepper.
  9. Serve over cooked rice and enjoy!
