- 1/2 cup ketchup
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 1 tablespoon water
- Salt and pepper to taste
- Cooked rice, for serving
Instructions
- Prepare the ingredients by chopping the chicken, bell peppers, onion, and pineapple into bite-sized pieces.
- Assemble the chicken, bell peppers, onion, and pineapple in the Instant Pot, spreading them evenly.
- Mix the sauce by whisking together the ketchup, soy sauce, brown sugar, and rice vinegar in a medium bowl.
- Pour the sauce over the chicken and vegetables in the pot.
- Seal the lid and set the Instant Pot to cook on high pressure for 10 minutes.
- Natural release for 5 minutes after cooking, then quick release the remaining pressure.
- Thicken the sauce by mixing cornstarch and water until smooth, then stir it into the pot.
- Season to taste with salt and pepper.
- Serve over cooked rice and enjoy!
