- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 tablespoon red food coloring
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon milk
Instructions
- Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
- In a bowl, mix together the flour, cocoa powder, sugar, baking powder, and salt.
- In another bowl, whisk together the melted butter, eggs, red food coloring, and vanilla extract.
- Combine the wet and dry ingredients until just mixed.
- Pour the batter into the mini muffin tin, filling each cup about 2/3 full.
- Bake for 15-18 minutes or until a toothpick comes out clean.
- Let the brownie bites cool completely.
- In a separate bowl, mix the cream cheese, powdered sugar, and milk until smooth.
- Frost the cooled brownie bites with the cream cheese mixture.
- Serve and enjoy!
Notes
- Store in an airtight container for up to 3 days.
- For a richer flavor, add a pinch of espresso powder to the batter.
- These brownie bites can be frozen for up to a month.
