  • 2 large eggs

  • 3 cups old-fashioned oats
  • 1 cup powdered sugar
  • 1/2 cup unsweetened vanilla yogurt or cream cheese
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed until light and fluffy.
  3. Beat in the eggs, one at a time, ensuring each one is incorporated before adding the next. Stir in the vanilla extract.
  4. Whisk together the flour, baking soda, cinnamon, and salt in a separate bowl.
  5. Fold the dry ingredients into the wet mixture until just combined.
  6. Stir in the oats until evenly distributed.
  7. Drop generous portions of dough onto the prepared baking sheets, spaced about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are golden and the centers look set.
