Ingredients

3 oz Champagne, Prosecco, or Dry Sparkling Wine: Chilled. Prosecco is fruitier; Champagne is drier. For a non-alcoholic version, use non-alcoholic sparkling wine or ginger ale.

Instructions
Step 1: Prepare the Glass with a Festive Rim
Pour your chosen sugar onto a small plate. Take a lime or lemon wedge and run it around the outer rim of a champagne flute. Invert the glass and dip the moistened rim into the sugar, twisting gently for an even, sparkly coat. Set aside. For an extra festive touch, use red or gold sanding sugar.
Step 2: Pour the Pineapple Juice Base
Using your jigger, carefully measure and pour 2 oz of chilled pineapple juice into the bottom of the prepared flute. This forms the solid, golden “horizon” of your sunrise.
Step 3: Create the Cranberry Layer (The Key Step)
Here is the technique for a clean layer. Hold a spoon upside down, with the back of the bowl just above the surface of the pineapple juice. Slowly pour 1 oz of chilled cranberry juice cocktail over the back of the spoon. The spoon disperses the weight of the liquid, allowing it to float gently on top of the denser pineapple juice, creating a distinct red layer. If using optional grenadine, add it now in the same way.
Step 4: Top with Bubbles
Now, slowly and gently pour 3 oz of well-chilled champagne or prosecco directly into the center of the glass. Pour down the side of the glass if you prefer a more integrated drink, or continue using the spoon method for a more defined top layer. The bubbles will mix with the cranberry, creating a beautiful effervescent pink ombre effect as it rises through the red layer.
Step 5: Observe the Sunrise
As the champagne is poured, watch the magical “sunrise” happen. The red cranberry layer will rise and swirl with the bubbles, creating a dynamic, living gradient of color. Allow it to settle for a moment.
Step 6: Add the Final Garnish
Skewer 2-3 fresh cranberries on a cocktail pick or a small sprig of rosemary and rest it across the rim of the glass. A twist of orange peel expressed over the top adds a wonderful citrus aroma.
Step 7: Serve with a Smile
