- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 4 large eggs
- 1 cup sour cream
- 1/2 cup milk
- 1/4 cup freshly squeezed lemon juice
- Zest of 1 lemon
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 8 oz cream cheese, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Cream together the softened butter and granulated sugar using an electric mixer until light and fluffy, about 2–3 minutes.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the sour cream, milk, lemon juice, and zest until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry blend to your wet mixture, mixing until just combined.
- Divide the batter evenly between the prepared pans.
- Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for about 10 minutes before turning them out onto wire racks to cool completely.
- For the frosting, beat together the softened cream cheese and butter until smooth, then add powdered sugar gradually.
- Mix in the vanilla extract and heavy cream until you reach your desired consistency.
- Spread frosting between the layers and on top of the cake.
