Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/4 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and granulated sugar using an electric mixer until light and fluffy, about 2–3 minutes.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the sour cream, milk, lemon juice, and zest until well combined.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry blend to your wet mixture, mixing until just combined.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cakes to cool in the pans for about 10 minutes before turning them out onto wire racks to cool completely.
  9. For the frosting, beat together the softened cream cheese and butter until smooth, then add powdered sugar gradually.
  10. Mix in the vanilla extract and heavy cream until you reach your desired consistency.
  11. Spread frosting between the layers and on top of the cake.
  12. Serve and enjoy!
