- 2 cups broccoli florets
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
- 2 cups vegetable broth
Instructions
- In a large pot, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Stir in the orzo and cook for 1-2 minutes.
- Add vegetable broth and bring to a boil.
- Reduce heat and simmer for about 10 minutes, stirring occasionally.
- Add broccoli florets and cook for an additional 5 minutes until orzo is tender and broccoli is bright green.
- Stir in grated parmesan cheese and season with salt and pepper.
- Serve warm and enjoy!
