- 8 oz pasta of choice
- 2 large onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 4 cups beef or vegetable broth
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup grated Gruyère cheese
- 1/2 cup grated Parmesan cheese
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the butter and olive oil over medium heat. Add the sliced onions and cook until caramelized, about 20-25 minutes.
- Add the broth and thyme to the skillet, bringing it to a simmer. Season with salt and pepper.
- Stir in the cooked pasta, mixing well to combine.
- Transfer the pasta mixture to a baking dish and top with Gruyère and Parmesan cheese.
- Bake in a preheated oven at 350°F (175°C) for 15-20 minutes, or until the cheese is bubbly and golden.
- Let it cool slightly before serving. Enjoy!

- For a vegetarian version, use vegetable broth instead of beef broth.
