- 2 large onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 4 cups beef or vegetable broth
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup Gruyère cheese, shredded
- 1/2 cup Parmesan cheese, grated
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, melt the butter and olive oil over medium heat.
- Add the sliced onions and cook, stirring frequently, until caramelized, about 20-25 minutes.
- Add the minced garlic and thyme, cooking for an additional minute.
- Pour in the broth and bring to a simmer. Season with salt and pepper.
- Add the cooked pasta to the skillet and stir to combine.
- Sprinkle the Gruyère and Parmesan cheese over the pasta and cover until the cheese is melted.
- Serve hot, garnished with additional thyme if desired.
Notes
- For a vegetarian version, use vegetable broth instead of beef broth.
- Feel free to add cooked chicken or mushrooms for extra protein.
