- 1 cup diced vegetables (carrots, celery, and peas)

- 1 cup dumpling mix

Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced vegetables and sauté until tender.
- Pour in chicken broth and water, bringing the mixture to a boil.
- Add the shredded chicken and season with salt and pepper.
- Prepare the dumpling mix according to package instructions.
- Drop spoonfuls of the dumpling mix into the boiling soup.
- Cover and simmer for about 15 minutes, or until dumplings are cooked through.
