Description

A hearty and comforting crockpot goulash made with ground beef, elbow macaroni, and a medley of savory flavors.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups elbow macaroni
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 2 cups beef broth
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat until rich and deep brown.
  2. Add the chopped onion and minced garlic, sautéing until softened and fragrant.
  3. Transfer the cooked beef mixture into your crockpot, spreading it out evenly.
  4. Add the chopped bell pepper, elbow macaroni, diced tomatoes, tomato sauce, and beef broth.
  5. Sprinkle in the Italian seasoning, then season generously with salt and pepper.
  6. Stir everything until well combined.
  7. Cover the crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours.
  8. Serve the goulash warm and enjoy!

Notes

For make-ahead, prepare the ingredients the night before. Can also be cooked in an Instant Pot or oven.
