- 2 lbs pork shoulder
- 4 cups chicken broth
- 2 cups water
- 1/4 cup soy sauce
- 2 tbsp miso paste
- 1 tbsp ginger, minced
- 4 cloves garlic, minced
- 1 tbsp sesame oil
- 1 tsp red pepper flakes
- 4 packs of ramen noodles
- 2 cups bok choy, chopped
- 2 green onions, sliced
- Soft-boiled eggs (optional)
Instructions
- In a crockpot, combine the chicken broth, water, soy sauce, miso paste, ginger, garlic, sesame oil, and red pepper flakes.
- Add the pork shoulder to the crockpot, ensuring it is submerged in the liquid.
- Cover and cook on low for 8 hours or until the pork is tender and easily shredded.
- Once cooked, remove the pork and shred it with two forks.
- Return the shredded pork to the crockpot and stir to combine with the broth.
- In a separate pot, cook the ramen noodles according to package instructions.
- In the last 10 minutes of cooking, add the bok choy to the crockpot.
- Serve the ramen noodles in bowls, topped with the pork mixture, green onions, and soft-boiled eggs if desired.
Notes
- For extra crispiness, broil the shredded pork in the oven for a few minutes before serving.
- Adjust the spice level by adding more or less red pepper flakes.
- This dish can be made ahead of time and reheated for easy meals.
