Ingredients

  • 4 cups chicken broth
  • 2 cups water
  • 1/4 cup soy sauce
  • 2 tbsp miso paste
  • 1 tbsp ginger, minced
  • 4 cloves garlic, minced
  • 1 tbsp sesame oil
  • 1 tsp red pepper flakes
  • 4 packs of ramen noodles
  • 2 cups bok choy, chopped
  • 2 green onions, sliced
  • Soft-boiled eggs (optional)

Instructions

  1. In a crockpot, combine the chicken broth, water, soy sauce, miso paste, ginger, garlic, sesame oil, and red pepper flakes.
  2. Add the pork shoulder to the crockpot, ensuring it is submerged in the liquid.
  3. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.
  4. Once cooked, remove the pork and shred it with two forks.
  5. Return the shredded pork to the crockpot and stir to combine with the broth.
  6. In a separate pot, cook the ramen noodles according to package instructions.
  7. In the last 10 minutes of cooking, add the bok choy to the crockpot.
  8. Serve the ramen noodles in bowls, topped with the pork mixture, green onions, and soft-boiled eggs if desired.

Notes

  • For extra crispiness, broil the shredded pork in the oven for a few minutes before serving.
  • Adjust the spice level by adding more or less red pepper flakes.
