- 1/4 cup erythritol or preferred sweetener
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 cup almond flour
- 2 large eggs
- 1/4 tsp baking powder
- Butter for frying
Instructions
- In a mixing bowl, combine cream cheese, erythritol, vanilla extract, and ground cinnamon until smooth.
- In another bowl, mix almond flour, eggs, and baking powder until well combined.
- Heat a non-stick skillet over medium heat and add butter.
- Pour a small amount of the almond flour mixture into the skillet, spreading it into a thin layer.
- Cook until golden brown on one side, then flip and cook the other side.
- Remove from skillet and spread the cream cheese mixture on top.
- Roll up the cooked almond flour layer and repeat with remaining mixture.
- Serve warm and enjoy!
Notes
- Make sure the cream cheese is softened for easier mixing.
- Adjust sweetness according to your taste preference.
