Crispy Beef Cheese Chimichangas are delicious, deep-fried burritos filled with seasoned beef and melted cheese, perfect for a satisfying meal.


Ingredients

  • 1 lb ground beef
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 4 large flour tortillas
  • Oil for frying

Instructions

  1. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add chopped onion and minced garlic to the skillet and sauté until softened.
  3. Stir in chili powder, cumin, salt, and pepper. Cook for another 2 minutes.
  4. Remove from heat and mix in shredded cheese until melted.
  5. Place a portion of the beef mixture in the center of each tortilla and fold in the sides, then roll up tightly.
  6. Heat oil in a deep fryer or large pot to 350°F (175°C).
  7. Carefully place chimichangas in the hot oil and fry until golden brown, about 3-4 minutes per side.
  8. Remove from oil and drain on paper towels.
  9. Serve hot with salsa or guacamole.

Notes

  • For extra flavor, add diced jalapeños to the beef mixture.
  • These can be baked instead of fried for a healthier option.
