Crispy Beef Cheese Chimichangas are delicious, deep-fried burritos filled with seasoned beef and melted cheese, perfect for a satisfying meal.
Ingredients

- 1 lb ground beef
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 4 large flour tortillas
- Oil for frying
Instructions
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add chopped onion and minced garlic to the skillet and sauté until softened.
- Stir in chili powder, cumin, salt, and pepper. Cook for another 2 minutes.
- Remove from heat and mix in shredded cheese until melted.
- Place a portion of the beef mixture in the center of each tortilla and fold in the sides, then roll up tightly.
- Heat oil in a deep fryer or large pot to 350°F (175°C).
- Carefully place chimichangas in the hot oil and fry until golden brown, about 3-4 minutes per side.
- Remove from oil and drain on paper towels.
- Serve hot with salsa or guacamole.
Notes
- For extra flavor, add diced jalapeños to the beef mixture.
- These can be baked instead of fried for a healthier option.
- Serve with sour cream for dipping.
