Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup fresh raspberries
  • 1/4 cup raspberry jam

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the softened butter, eggs, vanilla extract, and buttermilk to the dry ingredients and mix until smooth.
  4. Fill each cupcake liner halfway with the batter.
  5. In a small bowl, combine the fresh raspberries and raspberry jam.
  6. Add a spoonful of the raspberry mixture on top of the batter in each cupcake liner.
  7. Top with more batter until the liners are about 3/4 full.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Let the cupcakes cool completely before serving.

Notes

  • For a richer chocolate flavor, use dark cocoa powder.
  • These cupcakes can be topped with whipped cream or chocolate frosting.
