- 8 large eggs
- 1 1/2 cups white granulated sugar
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 3 medium mangos
- 8 oz cream cheese (softened)
- 1 cup white chocolate chips (melted)
- 3/4 cup mango prepared puree
- 2 cups heavy cream (chilled)
- 1 cup confectioner’s sugar
- Additional mango slices, cookies or white chocolate for garnish
Instructions
- Preheat Your Oven to 350°F (177°C) and line two or three 8-inch cake rounds with parchment paper.
- Whip the eggs, granulated sugar, and vanilla extract in a stand mixer for 8 to 10 minutes until fluffy.
- Combine the flour and baking powder in another bowl, then gradually mix into the egg mixture, folding gently.
- Bake the cake batter evenly in prepared pans for 22 to 25 minutes until golden.
- Cool cakes in pans for 15–20 minutes, then shift to a wire rack to cool completely.
- Prepare the mango puree by blending peeled and chopped ripe mangos until smooth.
- Make the mango frosting by whipping cream cheese until smooth, mixing in melted white chocolate and then adding mango puree.
- Whip the heavy cream with confectioner’s sugar until stiff peaks form.
- Combine the mango cream cheese mixture into the whipped cream until fully integrated.
- Assemble the cake with layers of mango puree and frosting, decorating the top and sides.
- Refrigerate the cake until serving to enhance the flavor.
Notes
For added freshness, make the cake layers and frosting a day in advance. Customize with different fruits or add a hint of coconut.
