Chocolate Covered Strawberry Cupcakes that Delight Every Bite!

Description

Delicious chocolate cupcakes topped with fresh strawberries and a rich chocolate ganache.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 cup fresh strawberries, chopped
  • 1 cup chocolate chips
  • 1 cup heavy cream (for ganache)
  • 8 oz semi-sweet chocolate (for ganache)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, vegetable oil, vanilla extract, and buttermilk.
  4. Combine the wet and dry ingredients until just mixed, then fold in the chopped strawberries and chocolate chips.
  5. Fill the cupcake liners about 2/3 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. While the cupcakes cool, prepare the ganache by heating the heavy cream until just boiling, then pour it over the chopped chocolate. Stir until smooth.
  8. Once the cupcakes are cool, dip the tops in the ganache and place a whole strawberry on top.
  9. Let the ganache set before serving.

Notes

  • For a richer flavor, use dark chocolate for the ganache.
  • Store cupcakes in an airtight container for up to 3 days.
  • These cupcakes can be made a day in advance.
