Description
Delicious chocolate cupcakes topped with fresh strawberries and a rich chocolate ganache.

- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsweetened cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 large eggs
- ½ cup vegetable oil
- 1 tsp vanilla extract
- 1 cup buttermilk
- 1 cup fresh strawberries, chopped
- 1 cup chocolate chips
- 1 cup heavy cream (for ganache)
- 8 oz semi-sweet chocolate (for ganache)
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together the eggs, vegetable oil, vanilla extract, and buttermilk.
- Combine the wet and dry ingredients until just mixed, then fold in the chopped strawberries and chocolate chips.
- Fill the cupcake liners about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- While the cupcakes cool, prepare the ganache by heating the heavy cream until just boiling, then pour it over the chopped chocolate. Stir until smooth.
- Once the cupcakes are cool, dip the tops in the ganache and place a whole strawberry on top.
- Let the ganache set before serving.
Notes
- For a richer flavor, use dark chocolate for the ganache.
- Store cupcakes in an airtight container for up to 3 days.
- These cupcakes can be made a day in advance.
