- 2 medium zucchini, chopped
- 2 medium tomatoes, diced
- 8 oz pasta (fusilli, penne, or spaghetti)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Salt, to taste

- Grated Parmesan cheese (optional)
Instructions
- Cook the pasta in a large pot with salted boiling water until al dente, then drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté for 30 seconds.
- Slice the chicken sausages and add them to the skillet, cooking for 5-7 minutes until golden.
- Introduce chopped zucchini and diced tomatoes, seasoning with salt and pepper. Simmer for 5-10 minutes.
- Fold in the drained pasta, tossing to combine and coat in sauce.
- Serve hot, garnished with Parmesan cheese if desired.
