Ingredients

  • 8 oz chicken sausages
  • 2 medium zucchini, chopped
  • 2 medium tomatoes, diced
  • 8 oz pasta (fusilli, penne, or spaghetti)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Cook the pasta in a large pot with salted boiling water until al dente, then drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and sauté for 30 seconds.
  4. Slice the chicken sausages and add them to the skillet, cooking for 5-7 minutes until golden.
  5. Introduce chopped zucchini and diced tomatoes, seasoning with salt and pepper. Simmer for 5-10 minutes.
  6. Fold in the drained pasta, tossing to combine and coat in sauce.
  7. Serve hot, garnished with Parmesan cheese if desired.
