An irresistible cherry chocolate mousse cake featuring rich chocolate layers and a luscious cherry-infused mousse filling.

- 6 large eggs
- 1 cup white granulated sugar
- 1 tsp vanilla extract
- 1 tsp coffee extract
- 1 cup all-purpose flour
- 1/3 cup cocoa powder
- 1 tsp baking powder
- 1 1/2 cups whole milk
- 1 tablespoon all-purpose flour
- 3 large egg yolks
- 1/3 cup white granulated sugar
- 2 tbsp corn starch
- 2 tbsp water
- 1 tsp vanilla extract
- 1/2 cup unsalted butter
- 1 1/2 cups semi-sweet chocolate chips
- 3 cups heavy cream (chilled)
- 2 to 3 lbs fresh cherries (pitted and quartered)
- 1/2 to 1 cup cherry liqueur
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a springform pan with parchment paper.
- Beat the eggs and granulated sugar on high speed for about 5 minutes until light and fluffy.
- Fold in the vanilla extract and coffee extract.
- Sift together the flour, cocoa powder, and baking powder. Gradually incorporate this dry mixture into the egg mixture, taking care not to deflate the batter.
- Pour the batter into the prepared pan, smoothing out the top.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean. Let cool completely before removing from the pan.
- Whisk together milk, flour, egg yolks, and sugar over medium heat in a saucepan. Stir continuously to avoid lumps until thickened.
- Remove from heat and stir in the corn starch dissolved in water along with the vanilla extract and butter, mixing until smooth. Set aside to cool.
- In a microwave-safe bowl, melt the chocolate chips. Let it cool slightly.
- Whip the chilled heavy cream until soft peaks form.
- Fold the custard into the whipped cream, then fold in the melted chocolate and add the cherries and cherry liqueur.
- Cut the cooled sponge cake horizontally to create two layers.
- Place one layer on a serving plate and spread half of the cherry mousse filling on top. Add the second layer and frost with the remaining mousse filling. Decorate as desired.
Notes
Make-ahead tips: Prepare the sponge cake and custard a day in advance for enhanced flavor. You can also make it in an air fryer; adjust baking time accordingly.
