Description

An irresistible cherry chocolate mousse cake featuring rich chocolate layers and a luscious cherry-infused mousse filling.


Ingredients

  • 6 large eggs
  • 1 cup white granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp coffee extract
  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1 tsp baking powder
  • 1 1/2 cups whole milk
  • 1 tablespoon all-purpose flour
  • 3 large egg yolks
  • 1/3 cup white granulated sugar
  • 2 tbsp corn starch
  • 2 tbsp water
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter
  • 1 1/2 cups semi-sweet chocolate chips
  • 3 cups heavy cream (chilled)
  • 2 to 3 lbs fresh cherries (pitted and quartered)
  • 1/2 to 1 cup cherry liqueur

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a springform pan with parchment paper.
  2. Beat the eggs and granulated sugar on high speed for about 5 minutes until light and fluffy.
  3. Fold in the vanilla extract and coffee extract.
  4. Sift together the flour, cocoa powder, and baking powder. Gradually incorporate this dry mixture into the egg mixture, taking care not to deflate the batter.
  5. Pour the batter into the prepared pan, smoothing out the top.
  6. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Let cool completely before removing from the pan.
  7. Whisk together milk, flour, egg yolks, and sugar over medium heat in a saucepan. Stir continuously to avoid lumps until thickened.
  8. Remove from heat and stir in the corn starch dissolved in water along with the vanilla extract and butter, mixing until smooth. Set aside to cool.
  9. In a microwave-safe bowl, melt the chocolate chips. Let it cool slightly.
  10. Whip the chilled heavy cream until soft peaks form.
  11. Fold the custard into the whipped cream, then fold in the melted chocolate and add the cherries and cherry liqueur.
  12. Cut the cooled sponge cake horizontally to create two layers.
  13. Place one layer on a serving plate and spread half of the cherry mousse filling on top. Add the second layer and frost with the remaining mousse filling. Decorate as desired.

Notes

Make-ahead tips: Prepare the sponge cake and custard a day in advance for enhanced flavor. You can also make it in an air fryer; adjust baking time accordingly.
