Description

Deliciously rich soft tortilla tacos filled with seasoned ground beef, cream cheese, and topped with melty cheese and fresh garnishes.


Ingredients

  • 1 lb ground beef
  • 1 can Rotel diced tomatoes with green chilies
  • 8 oz cream cheese
  • 1 packet taco seasoning
  • 8 soft tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Toppings (lettuce, tomatoes, sour cream, etc.)

Instructions

  1. Brown the beef: In a skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula as it sizzles. Drain any excess fat.
  2. Mix in Rotel & seasoning: Stir in the can of Rotel tomatoes and taco seasoning.
  3. Add cream cheese: Cube the cream cheese and add it to the skillet. Stir until melted and blended into the beef mixture.
  4. Warm the tortillas: In a pan or microwave, warm the tortillas for about 30 seconds.
  5. Assemble the tacos: Grab a tortilla, spoon in the beef mixture, and top with shredded cheese and desired garnishes.
  6. Serve & enjoy: Serve immediately with a variety of colorful toppings.

Notes

For the make-ahead option, prepare the beef mixture in advance and reheat before assembling. Use lean ground turkey or chicken for a healthier alternative.
