- 1 lb ground beef
- 1 can Rotel diced tomatoes with green chilies
- 8 oz cream cheese
- 1 packet taco seasoning
- 8 soft tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- Toppings (lettuce, tomatoes, sour cream, etc.)
Instructions
- Brown the beef: In a skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula as it sizzles. Drain any excess fat.
- Mix in Rotel & seasoning: Stir in the can of Rotel tomatoes and taco seasoning.
- Add cream cheese: Cube the cream cheese and add it to the skillet. Stir until melted and blended into the beef mixture.
- Warm the tortillas: In a pan or microwave, warm the tortillas for about 30 seconds.
- Assemble the tacos: Grab a tortilla, spoon in the beef mixture, and top with shredded cheese and desired garnishes.
- Serve & enjoy: Serve immediately with a variety of colorful toppings.
Notes
For the make-ahead option, prepare the beef mixture in advance and reheat before assembling. Use lean ground turkey or chicken for a healthier alternative.
