- 4 flour tortillas
- 8 oz cream cheese, softened
- 1 cup fresh blueberries
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- Butter for cooking
Instructions
- In a bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Spread the cream cheese mixture evenly on two tortillas.
- Top with fresh blueberries.
- Place the other two tortillas on top to form quesadillas.
- Heat a skillet over medium heat and add a little butter.
- Cook each quesadilla for about 3-4 minutes on each side until golden brown and crispy.
- Remove from heat, slice, and serve warm.
Notes
- Feel free to add more fruits like strawberries or bananas.
- Serve with maple syrup for extra sweetness.
- These can be made ahead and reheated for a quick breakfast.
